• Approx 1kg casserole beef steak 
  • Thai Green Curry Paste (I use Valcom)
  • 1 tbsp fish sauce
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 3/4 cup beef stock
  • 1 can coconut cream (organic is best with no thickeners)
  • 1 cup diced pumpkin
  • 1 cup frozen green beans
  • Opt: 1 chilli

To Serve

  • Serve with rice or for low carb choose cauliflower rice (can buy in frozen section) or try Konjac Noodles. Also delicious by itself.

Method:

  1. Dice the beef and in a frying pan add the olive oil and over a high heat brown the meat in batches until seared and caramelised. Remove from the pan pop in slow cooker. 
  2. Add the seared meat and the rest of the ingredients into the slow cooker.
  3. Cook on low for 8 hours.
  4. Serve with rice, cauliflower rice or konjac noodles. Add a tbsp of greek yogurt on top if you like!
