• 2 cups rolled oats
  • 2 cups nuts and seeds (sliced almonds, pecans, walnuts, pumpkin seeds, sunflower seeds chia) Tip: The small bags of nuts & seeds at Pak N Save are about 3/4 cup). Sometimes I will only buy a few and throw together with oats, liquids and dried fruit. This recipe can be adjusted to suit budget, taste, what you have in the pantry at the time.
  • 2 TBSP peanut butter
  • 2 TBSP coconut oil (if you don’t have coconut oil you can double the peanut butter amount)
  • 2 TBSP maple syrup or honey
  • 1/4 cup dried fruit optional

 

 

 

Method:

  1.  Preheat oven to 160 degrees. Line a roasting tray with baking paper. 
  2. Add all dry ingredients to a bowl and mix.
  3. Add coconut oil, maple syrup and peanut butter to a cup and melt in microwave so its runny.
  4. Pour liquid over dry ingredients and mix well. 
  5. Spread granola evenly over tray and bake for about 15 minutes until golden. Toss granola halfway to prevent burning. 
  6. If you are adding any dried fruit, add at the end once granola has been baked. 
  7. Serve with unsweetened yogurt and fresh fruit.
