High protein, satisfying snack or can be part of a meal. So quick to make!

  

Makes 12 muffins:

 

  • 12 rasher bacon
  • 12 eggs
  • Parmesan cheese or feta
  • Opt: Can also add veggies eg) spinach, spring onions, grated zucchini. Just be sure to squeeze excess before adding to muffin cup so they don’t go watery. 

 

Method

 

Heat oven to 180 degree. Lightly grease muffin tray. 

  1. Place one rasher inside each muffin cup, lining the edge. 
  2. Crack one egg into each cup
  3. Grate parmasean or sprinkle with feta cheese into each cup. 
  4. Add half tsp relish in each muffin. I use Anathoth Farmstyle Pickle
    5. 
    Bake for approx 20 minutes until egg is cooked through.

    Keep in freezer if you like and pop in kids lunch boxes or have alongside a smoothie for a quick, high protein breakfast.
