From the wonderful book What the Fat, here is a granola recipe minus the dried fruit. If you need to reduce your carbs then many store brought muesli and granolas have lots of dried fruit.

My simple hack to making things taste sweet is using dried spices like cinnamon and mixed spice, then added a dash of a good quality vanilla like Heilala. I love the taste of vanilla, it makes everything taste good!

Serves: 6

  • 2 Tbsp coconut oil, melted
  • 3/4 cup macadamias (optional as expensive!)
  • 2/3 cup almonds
  • 1 1/2 cups  walnuts
  • 1 cup shredded coconut
  • 3 Tbsp  sunflower seeds
  • 3 Tbsp  pumpkin seeds
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • Dash of vanilla essence

Serve with unsweetened yogurt and berries (eg handful frozen blueberries).

Preheat the oven to 180°C.

Place the nuts and coconut oil in an ovenproof dish and roast for 6–7 minutes. Give them a stir to ensure even cooking, and then add in the seeds, and cinnamon and/or mixed spice, if using. Cook for a further 5 minutes.

Remove from the oven, turn the mix out into a large bowl to allow it to cool thoroughly before transferring to sealable containers for storage.
